Did you know that today is National Artichoke Hearts day?
It was surprising for us to learn the health benefits of artichokes; they are an excellent source of dietary fiber, magnesium, and minerals. The fiber intake from eating artichokes can help to lower blood sugar and blood pressure levels ultimately helping to prevent inflammation and protect your heart health. Cynarin can be found in artichokes and is responsible for giving you that sweet taste when you eat one but also helps to increase the bile production in our livers and rids the cholesterol from our bodies.
To celebrate today Chef Andrew Moret from Carlton Senior Living Davis has extended a healthy alternative spin to us on the traditional artichoke dip we all love. Check out his steps in making this and the full recipe below.
For alternative healthy options, you can substitute the spinach for kale. For extra garnishment, you can sprinkle Parmesan cheese, add basil or rosemary to the top and serve.
