Leftover Egg Rolls
All your favorite Thanksgiving Leftovers, wrapped in a spring roll, and golden fried. Here are the few items you will need to provide to make this dish:
- Assortment of Leftovers (Turkey, Stuffing, Mashed Potatoes, Gravy, Green Bean Casserole, or anything else that you enjoy in a Thanksgiving dinner)
- 1 package Egg Roll or Spring Roll Wrappers (6”x6”)
- 2 individual Eggs
- Soybean or Vegetable Oil (for Frying)
In this demonstration, Chef MJ uses cooked Citrus Brined Turkey Breast, Giblet Gravy, Rosemary Stuffing, and Whipped Potatoes for the Filling.
For the easiest and best results mix ingredients together. Taste to make sure it’s yummy…of course!
Next crack your eggs and beat until mixed. Take an individual wrapper and smear the edges with egg. This will assist in ensuring the final egg roll (when rolled) stays put when frying.
Add approximately 2 tablespoons of your leftover mixture into the lower part of the diamond of the wrapper. From there, begin wrapping – starting with the bottom. When folding over, lightly press the mixture through the wrapper, to smooth out evenly. Then fold the two sides and begin rolling tightly – using firm yet gentle pressure.
For best results, heat your oil in a large pot (with plenty of room for expansion) to 325 degrees Fahrenheit. Use a thermometer and monitor to maintain temperature. Slowly lower each egg roll into the hot oil and fry until golden.
Serve with Cranberry Ponzu Sauce or your favorite dipping sauces. Enjoy!
